Custom laser-cut stainless steel grill surfaces should be seasoned before the first use. Heat the grill to about 250 degrees, then turn it off. Rub beef suet or vegetable oil onto the warm surface with care. A potato works for spreading the vegetable oil. Simply cut the potato in half and dip it into the oil. Use the potato to rub the oil onto the warm surface. You can stab the potato with a fork to use as a handle.

NEVER use steel wool on your grill. This will leave small amounts of mild steel behind, embedded into the grain of the stainless steel, and it will rust.

ALWAYS use a stainless steel scraper and a brass bristle or stainless steel bristle brush for cleaning your grilling surface. Do not use brushes or scrapers of other metals.

After grilling, leave the grill burners on or turn on the grill burners on the side where the food has been. Leave the grill running for ten minutes before shutting it down to help burn away drippings and residue on the grilling surface.

NEVER use chemicals to clean your grilling surface. In addition to cleaning with a brass bristle brush before each use, you can occasionally use lemon juice to clean a warmed grill surface. After cleaning with lemon juice, you should re-season your grill surface.

It is a good idea to occasionally burn off residue in your grill. Run the grill with the main burners on high with the hood closed for at least 30 minutes. This will burn off anything on the cooking surface or in the ceramic heat retention briquettes, and will dissolve much of anything that has accumulated in the hopper. The more you use sauces or grill fatty foods, the more frequently you should do this burn cycle.

Occasionally wipe down the inside of your warm grill hood with a damp rag to prevent excessive grease build-up.

Citrus-based stainless steel wiping cloths have become readily available. These are great for cleaning the outside of the grill. Alternatively, you can use a mild soap and water solution to wash your grill. Rinse your grill with clean water when finished.

Your rotisserie motor should be unplugged and stored indoors when not in use.
