What is one of the hottest restaurants in New York City today? If you
guessed a swanky spot that serves fancy French fare, you would be mistaken.
A classic steakhouse? Guess again. Sushi, Latin-Asian fusion cuisine,
or a spot run by a celebrity chef? Wrong, wrong, wrong.
Many would argue the hottest food in Manhattan is the authentic smoked
fare and pit barbecue found at Blue Smoke, which was opened in 2002 by
acclaimed restaurateur Danny Meyer. People still wait weeks for a reservation
at this trendy spot to be able to sample the smoked ribs, brisket, pulled
pork and applewood smoked chicken. And not only has its popularity showed
no signs of slowing, the restaurant has spawned several imitators as well...
Kalamazoo [Outdoor Gourmet], a company better known for its sleek and
sophisticated-looking stainless steel grills, is introducing the Smoke
Box. This unit can be attached to the side of any of the company's gas
grills, according to Geoff Bullard, who is responsible for the company's
product development.
The offset charcoal or wood fire in the Smoke Box filters smoke into
the main cooking chamber of the grill. Bullard notes that the Smoke Box
can [also] be used simultaneously with gas grilling, infusing smoke flavor
to grilled foods...
