The typical wood smoker has a cooking chamber, a firebox and a chimney that draws the smoke across the food in the cooking chamber. What sets Kalamazoo apart is that its cooking chamber is a high performance gas or hybrid grill. With the addition of the optional, side-mounted smoker box and the hood vent that acts as the chimney, the smoking system is complete.
The typical gas grill does not make an effective cooking chamber for traditional barbecue, but some key design features of the Kalamazoo make it ideal. The side-mounted smoker box, or firebox, becomes the sole heat source. A Kalamazoo’s deep hopper cookbox allows the heat to circulate evenly, with the smoke inlet positioned well below the cooking surface. Further more, Kalamazoo’s grill hood is specially designed to contain the smoke, and its unique air flow vent on top gives the cook fine temperature and smoke control. These elements combine to provide the power, control and improved heat dynamics required for traditional American barbecue.

The smoker box option enables any established smoking technique: wet or dry, slow or fast, without the grill's burners or with. The traditional, side-mounted smoker box includes the trays needed for each technique as well as the easy to use baffles for snuffing the fire and controlling the amount of smoke that enters the main cooking chamber.
